1cupgreen lentilsrinsed well and drained (soaking for at least 2 hours is optional, see Notes)
1medium onionfinely chopped
2celery stalks (about 1 cup)chopped
1small sweet potato (about 1 cup)peeled and finely grated
3.5oz(100g) peeled and roasted chestnutscoarsely chopped
14oz(400g) crushed tomatoes or tomato puree
3garlic cloveschopped
3tbspolive oil
2-3sprigs fresh oreganochopped, or 1 tbsp dried oregano
1sprig rosemary (about 1 tbsp)chopped
1tbspsweet paprika
½tspsalt
½tspfreshly ground black pepper
1cupwater
Instructions:
Bake the sweet potatoes: Preheat the oven to 400°F (200°C). Line a baking pan with parchment paper and cover with a thick layer of coarse salt as a bed for the sweet potatoes. Brush the sweet potatoes with olive oil and prick all over with a fork. Place on the salt bed and bake for about an hour, until very soft. Let cool.
Cook the lentil layer: While the sweet potatoes bake, heat 3 tbsp olive oil in a wide, deep pan. Add the chopped onion and celery, and sauté for 3-4 minutes, stirring occasionally. Add the grated sweet potato and garlic, and cook for another 2 minutes. Add the chestnuts, crushed tomatoes, oregano, rosemary, paprika, salt, pepper, and water. Mix well, cover, and bring to a boil. Lower to medium-low heat and cook for 25-30 minutes, until the liquid evaporates and the lentils are soft. Leave covered for a few more minutes.
Prep for assembly: Preheat the oven to 350°F (180°C) and lightly grease the baking dish with olive oil.
Make the sweet potato puree: Once the sweet potatoes are cool enough to handle, peel them, the skin should come off easily. Mash with a fork or potato masher in a bowl. Add the olive oil, chopped parsley, salt, and pepper, and mix well.
Assemble: Spread the lentil layer evenly across the bottom of the baking dish. Layer the sweet potato puree on top and smooth it out with a fork, gently scoring the surface if you like.
Bake: Bake, uncovered, for 1 hour. For a golden, crispy top, carefully remove the dish after 50 minutes, drizzle a little more olive oil on top, and return it to the oven for the final 10 minutes.
Notes:
Soaking the lentils for at least 2 hours is optional, it's completely your choice.
No chestnuts on hand? Leave them out, or substitute walnuts, though the flavor will be a bit different.
Canned sweet potato puree works as a shortcut, but roasting your own on a bed of coarse salt gives a much deeper, more concentrated flavor, worth the extra time if you have it.
