3.5oz(100g) coconut oilsoft or liquid (warm slightly in the microwave if solid)
½cupdark brown sugar
1tbspgranulated sugar
4oz(115g) unsweetened applesauce
¾cupflour
½tspbaking powder
½tspcinnamon
¼tspsalt
1cupold-fashioned oats
1cupgranola (see Key Ingredients for substitutes)
1apple (any type works)cut into small cubes, about ¼ inch (0.5cm)
Instructions:
Prep the oven: Preheat to 350°F (180°C) and line a baking sheet with parchment paper.
Mix the wet ingredients: In a mixing bowl, combine the coconut oil and both sugars, and mix well. Add the applesauce and stir again.
Add the dry ingredients: Add the flour, baking powder, cinnamon, and salt, and stir until fully incorporated. Fold in the oats, granola, and chopped apple, and mix until evenly combined.
Shape and bake: Using a cookie scoop or spoon, form dough balls about 1.5 inches (4cm) in diameter and place on the prepared baking sheet. Flatten to about ½ inch (1cm) high. Bake for about 30 minutes. Let cool.
Notes:
No granola? Use only oats instead, the cookies will just turn out a bit softer. Don't use only granola without any oats, the combination is what gives these cookies their texture.
Best fresh out of the oven, but keep well in a sealed container for up to a week.
